    What ever you choose is a matter of preference. I would install minimaly for a faster more stable enviroment

    Here are some excellent tutorials on how to do just what you want. I followed the Debian 3.1 Sarge "Perfect Set-up" and was quite happy. They have similar how-to's for Suse, Fedora, Ubuntu, and Mandriva.
