What OS should I use to create a server
I'm in my sophomore computer hardware class and I need to find and implement a server that includes the following: The server must run on the hardware available and it must be a network file server (nfs) compatible with Windows 2000/XP and be a dynamic host configuration protocol (dhcp) server. Meaning it will wait for a lab computer to request an IP address and then assign one within a set range. It should also employ an internet filter.
Other people are suggesting TopologiLinux. I'm just so ignorant about Linux OS's so I need a bit of help to get started.

I would use CentOS or Fedora. You actually don't want to set up NFS for file sharing to windows boxen, because they natively support SMB/CIFS filesharing, which is accomplished through the SAMBA daemon.

CentOS. It's free and based on the stable RHEL distro.
