I'm new to Linux and just had a brief question. I wanted to find out if Linux server software could be used to stream audio that would play on windows and mac media players?

Shoutcast. Which has tons of resources for help out. I used it for a small internet radio stream and it was perfect. There are ways to manage your song lists and an ability to play music even if your upstream goes dead or off-air.
Another vote for shoutcast.
We've been using it for a few years now to stream our commercial broadcast radio station. With shoutcast you have two apps really. The "encoder" and the server. The first is called sc_trans_040 and the second is scserver. Set up the configuration files in both to talk to each other and you'll be streaming in no time. :)
