    Hi and Welcome !

    Both are stable. Install latest version of OpenSuSe, 10.3.
    It is amazing what you can accomplish if you do not care who gets the credit.

    Why openSuse and not sled?

    You can install any of the two, but openSUSE can be obtained completely free of charge, but you have to pay a subscription fee for SLED/SLES if you want any upgrades or support. Also openSUSE tends to be a bit more cutting edge than SLED, so it usually has newer packages and features than SLED/SLES. openSUSE 11 will be released today, so you can take that for a spin.
