I have Suse 12.1 with kde. Originally I didn't like the
plasma screen and wiped it. Now I would like to have it back.

there should be a little icon in the upper right corner. its semi-transparent. if you click it you can get all your widgets set up including a view of a folder

I get the icon, called "New activity". When I click on it, I am asked to enter
what I want.OK, I type "plasma-desktop" - and nothing happens. So I
still don't know how to get that plasma screen back.
There is a web site, www.kde.org/workspace/plasma-desktop that someone
pointed me at, but all I get there is a sort of advertisement for how nice
the plasma desktops are and what they look like.

Since you state that you have the new activity you now have the KDE desktop.
You might want to start building a new one with:
1) r click anywhere on the Desktop & select Desktop Settings
2) In the box that shows up Unlock the widgets if need be and/or select from the dropdown Default Desktop
3) Select a background
4) after you close that once again r click anywhere & select Add Widgets add widgets & enjoy!
I think that's what your after.
