Glad things are working
Most of the time you are only likely to need the Ubuntu and Windows entries.

I tend to leave the other menu entries but you could # them out if you want. You know how to start in single user mode if you need to anyway and you would probably only run the memory test if you thought there were hardware issues.

Really its up to you what you want on your boot menu, which option is picked by default etc. Even if you needed to fix the menu you have done this from live CD already

I prefer clean GRUB Menu and usually delete all unnecessary lines.
Post the contents menu.lst file here.
