Installing and configuring Postfix on Ubuntu server

I have installed Ubuntu Server 8.04 and on it I have installed Postfix. What I want to do is:
I have mail server which is on Windows Server 2003, and I want mails to be controlled by Postfix. While im testing it, on virutal machine I have installed Microsoft Exchange on Windows Server 2003 and on the other machine I have Ubuntu Server with Postfix. Im sending mails from exchange with: for example- bad words and postfix doesnt recognize nothing. I dont know where could be the problem. Is there any good tutoriall who can help me on this. I think this is the hardest part of all project. The part of integration of Postfix with W. Server / Exchange Server.

One more thing: Do I need to install and ClamAV, Spamassassin, Amavisd-new and dkim-filter????

This is part what I dont know how to do it???

I would apprepriate your help.
