You'll certainly be able to replicate all of that functionality. Applications such as Ardour and Rosegarden along with Audacity will give you a great start. All of these applications and more are available through the repositories in Ubuntu, just go to System > Administration > Synaptic Package Manager and search for them (use the full search, not the quick search).
If you are serious about music production I would suggest taking a look at Ubuntu Studio which is more tailored to this kind of thing. It has a realtime kernel and comes with this software included. Also, Jack can be a bit of a pain to set up if you haven't worked with it before so Ubuntu Studio will give you a good head start
