If you check out the Wine apps database you would see that itunes is pretty much rated as garbage which means it does not work in Wine.
    WineHQ - iTunes

You could try alternative software such as Songbird.
    Songbird - Welcome

I'm sure there is other software for itunes but the names escape me as I don't use itunes and have no need for that type of software. I do use songbird to catalog my extensive music library.

I assume you tried using the uninstall software link found in the Applications - Wine menu?
If you have and it still won't uninstall then you can choose to completely remove Wine using Synaptic then going to your Home folder and deleting the .wine folder
After that you can reinstall Wine.

Another method is to just delete the software folders in wine, remove the links to the software in the menu and clean up the registry. You may still have leftovers though as you probably will not get all the system files out of the Windows\System32 folder that the software installed.

Therefore a fresh install of Wine is the best option.

Synaptic Package Manager, in the Administration menu. It's a very nice GUI to apt (deb) package management that lets you install and remove individual applications available from the Ubuntu repositories.

    Go to Home folder.
Then click on View in the top tool bar.
    Now select "Show Hidden Files"

You will now be able to see all the (dot) files and folders.
    These are your hidden files.
Find .wine folder and delete it.

I assume you mean the links in the application menu?

Place your mouse over the Applications button in your task bar.
Right click on it and select Edit Menus
Click on Applications in the left pane.
Then in the right pane highlight the Wine folder
Select Delete from the buttons on the right.
Now the Wine folder and application sub folders are no longer in your menu list.
