I think I accidentally uninstalled some packages clicking at completelly removal at some ipod utillities in synaptic. How can I fix this?

Easy answer is reinstall from your live cd, then update and install the restricted extras to make sure you have all the drivers that are available.

If you have a command line available, you might just run
sudo apt-get install <package-name>

I had a similar experience. I just wanted to uninstall some stuff I never used. This led to the entire desktop disappear. I guess they made several apps "that everyone should have" dependent on each other so as to make support easier, I dunno. Would be nice if there was some extra warning in synaptics when uninstalling these.

low graphics mode
Looks the proper graphics diver isn't installed . when booting hold down the shift key until the grub menu loads , then choose the recovery kernel and wait for a dialog .Then choose fix broken packages . An update/configuration should run and you will then get another dialog, choose normal boot.
Once you're booted into the desktop successfully choose admin / hardware and install the recommended graphics driver.
