Generally: To add most types of fonts to your Ubuntu or Debian Linux system, use Synaptic (System>Administration>Synaptic Package Manager), and search for 'font'. Fonts that are supported will show. Similar procedures will work in other Linux distributions. The Character Map application (Applications>Accessories>Character Map) will show which Unicode ranges are supported by each installed font.

For fonts that are not in your distro's repositories will require special treatment. I would suggest a Google search to get specific instructions.

Installing fonts in Linux is not specific to OpenOffice - fonts you install may be used by any application which is able to select different fonts.

Setting up keyboard input for East Asian and South Asian and a number of other scripts is another issue.
