Hello
I've not tried the latest version of Ubuntu but if that's what you are running, it comes with the Unity desktop. You can check the following wiki for some info on using and configuring it:

Maybe some Unity users will offer up some tips on configuring it in the interim.oz

Assuming you are using 11.04 you'll find them in Themes and Tweaks.
Right click on the Applications icon on the launcher on the left of the screen and choose Themes and Tweaks.
