Question about the different desktops in Ubuntu?

I'm trying to install a Gnome theme from Gnome-look.org, and after you click "change desktop background", one distro had at the top "theme, background" but on the one I'm using, it just has "Appearance" and no easy way to install themes. So I'm wondering if I can change this. Sorry if it doesn't make sense!
