The E-mail key is probably configured separately (look for the 'hotkeys' package configuration). One question - what happens when you click an e-mail link in Konqueror or use a "send via e-mail" option somewhere else in the OS? Does it also launch KMail or Thunderbird?

Look in KDE Control Centre under accessibility. To choose the default mail clisent and other defaults like browser, go to KDE Control Centre and look at KDE Components > Component Chooser.
