Can I Install some arbitrary software on Wine?

I have a perice of software called Meeting Maker on-top of RedHat Enterpise V4.0

How to go about that?

In general, you would insert the installation CD, navigate to it, and launch the Install.exe or Setup.exe with wine like by typing:
