I'm not familiar with the package management system for Xandros, but I see it's called Xandros Networks. Perhaps there's an "Add/Remove Software" menu item, or a "Xandros Networks" button somewhere in the menus that you could use to deselect OpenOffice?

Do you have more than the default repositories in your sources.list and full desktop enabled on your Eee PC? If so, you should be able to remove it in Synaptic (the package manager used in Xandros). If not, go here to get the most of your Eee PC.
